Many of us cook with a lot more oil than we really need. I know I used to. These days, I use almost no oil in my cooking. Whether you’re looking to eliminate oil entirely or just reduce the amounts you eat, you can follow these simple tips to skillfully cook with less oil.
Use Non-Stick Pots and Pans
A lot of the oil we use in cooking is really just to prevent the food from sticking to the bottom of the pot or pan. Non-stick pots and pans like Teflon or heavy stainless steel will solve this problem. For baking, line pans with parchment paper or use silicon pans instead.
Replace Oil with Vegetable Stock
To prevent food from drying out during roasting, pour a bit of vegetable stock into the pan instead of oil. Cover the pan for most of the baking time and only uncover for a bit at the end to allow for browning. This method works well for potatoes, sweet potatoes, zucchini and other vegetables. Add herbs and spices for flavor and you have a delicious dish.
Stir-fry or Saute with Water or Vegetable Broth
So many recipes begin with sauteing the onions, but you don’t need oil for that. A small of amount of water or vegetable broth works just as well. The trick is to start with a bit of water or vegetable broth and add more as needed, so you don’t end up steaming the onions instead of frying them. This method works for Asian-style stir-fry as well.
Healthier and lighter desserts
Cake and cookie recipes often call for oil, but it’s also possible to bake with whole food substitutes like applesauce, mashed bananas, pureed beans and grated zucchini. Oil free desserts are lighter and so much better for our health. If you are just getting started with oil-free vegan baking, look for recipes that are oil-free to make the process simpler.
