⅔ cup refined coconut oil, melted
⅔ cup vegan granulated sugar
⅔ cup packed vegan brown sugar
½ cup sweetened almond milk
2 tsp vanilla extract
2 ½ cups all purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp kosher salt
1 bag (9oz) vegan dark chocolate baking chips
1 bar (2.8oz) vegan sea salt dark chocolate; broken into ½” pieces
Preheat the oven to 350F.
In a large mixing bowl combine oil and sugars until well mixed. Stir in almond milk and vanilla extract.
Stir in all purpose flour, baking soda, and baking powder until combined and dough forms.
Add a bag of dark chocolate baking chips. Drop dough by rounded tablespoons roughly 2 inches apart onto ungreased cookie sheets.
Bake about 7 mins or until balls start to flatten.
Carefully remove from the oven and gently press one ½” chocolate bar piece into the top of the partially baked cookie.
Return pan back to oven to complete baking for additional 5-8 minutes.
Once baked, allow to cool completely on the cookie sheet. Store in a tightly covered container.
