1 head romaine lettuce or mixed greens
1 can hearts of palm, thinly sliced
1 can mandarin oranges
1 avocado, sliced
1 cup puffed rice noodles or crunchy salad noodles
1 tbsp fresh basil, chopped
Juice of 1 lime
1 tbsp olive oil
1 tsp honey or agave
Salt/pepper to taste
In a small bowl, whisk together dressing ingredients. Set aside.
Place the romaine lettuce in a large bowl.
Place avocado slices around the rim on the bowl.
Fill the center of the salad with hearts of palm and mandarin oranges.
Scatter chopped basil.
Place a heaping cup of crunchy noodles on top of the salad.
Serve with dressing on the side or mixed in.
