Michelle’s Hearts of Palm and Mandarin Crunchy Noodle Bowl

1 head romaine lettuce or mixed greens 

1 can hearts of palm, thinly sliced 

1 can mandarin oranges 

1 avocado, sliced 

1 cup puffed rice noodles or crunchy salad noodles 

1 tbsp fresh basil, chopped 


Juice of 1 lime 

1 tbsp olive oil 

1 tsp honey or agave
Salt/pepper to taste


  1. In a small bowl, whisk together dressing ingredients. Set aside. 

  2. Place the romaine lettuce in a large bowl. 

  3. Place avocado slices around the rim on the bowl. 

  4. Fill the center of the salad with hearts of palm and mandarin oranges.

  5. Scatter chopped basil. 

  6. Place a heaping cup of crunchy noodles on top of the salad. 

  7. Serve with dressing on the side or mixed in.
