Oshrat and Rinat’s Halva Coffee Cake Recipe

Ingredients

For the cake batter:

3 eggs 

1 cup brown sugar 

¾ cup oil or 1 cup softened butter (if dairy)

5 tbsp tahini paste 

1 tsp vanilla

4 tbsp coconut milk or sour cream (if dairy)

1.5 tbsp baking powder 

1 ¾ cup flour 

For the Walnut mixture:

½ cup brown sugar 

1 cup chopped walnuts or pecans 

1 tbsp cinnamon 

½ tsp kosher salt 1

 tsp nutmeg (optional)

1 tsp white sugar


Instructions

  1. In a big bowl, whisk the eggs and brown sugar together for 1 minute. 

  2. Add the butter/oil and mix for another minute. 

  3. Next, add the tahini paste,  vanilla and coconut milk/sour cream. Mix to combine.

  4. Add the  flour and baking powder. 

  5. Make the walnut mixture in a separate bowl: mix the brown sugar with the walnuts/pecans, cinnamon, kosher salt, nutmeg and white sugar. 

  6. In a greased cake pan, layer half of the batter then sprinkle half the walnut mixture. Repeat with the remaining batter and mixture.

  7. Bake at 350 for 40 mins.
