Vegan Molasses “Cookie” Date Balls

Ingredients

2 cups of soft dates, pitted

1 cup of oats or quinoa flakes 

1 tsp fresh ginger, minced (or more)

1 tsp cinnamon

¼ tsp salt

2 tablespoons Blackstrap molasses


Instructions

  1. Place all ingredients into a food processor or blender and blend until smooth. If you are using a blender, make in two batches

  2. Chill in the refrigerator for 1 hour.

  3. Take anywhere from teaspoon to a tablespoon of the mixture at a time. Using slightly wet hands, roll into balls and set aside. 

  4. Roll the balls in your choice of topping: ground quick oats, powdered sugar or powdered cocoa. Serve or pop into the freezer to store.
