Veggie Boosted Vegan Split Pea Soup Recipe

Ingredients

1 onion, diced

2 garlic cloves, minced

1 shallot, diced 

2 zucchini, diced 

1 celery stalk, diced 

2 medium carrots, diced

1 ⅕ cups (250 grams) split peas 

5 cups (1.2 liters) water 

½ tsp white vinegar 

½ tsp salt

Pinch cayenne pepper


Instructions

Instructions for pressure cooker:

  1. In the pressure cooker pan, saute diced onion, shallot and garlic for 5 minutes.

  2. Add diced zucchini and carrot and mix evenly.

  3. Add the dried split peas, water, white vinegar, salt and cayenne pepper. 

  4. Pressure cook for 20 minutes.

  5. Allow to cook for another 20 minutes (or more). Blend, if desired. 

 

Stove-top instructions:

  1. In a large soup pot, saute diced onion, shallot and garlic for 5 minutes.

  2. Add diced zucchini and carrot and mix evenly.

  3. Add dried split peas, water, white vinegar, salt and cayenne pepper.

  4. Bring to a boil. Reduce heat, cover and simmer 2 ½ to 3 hours, or until peas are tender.

  5. Blend, if desired.
